Why this recipe works

Ingredients

  • 1 unbaked 23 cm (9-inch) pie crust
  • 425 g pumpkin purée
  • 3 eggs
  • 250 ml (1 cup) evaporated milk or cream
  • 150 g (3/4 cup) brown sugar
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp salt

Method

  1. Heat the oven to 220°C (425°F). Fit the crust into a pie plate and chill.
  2. Whisk pumpkin, eggs, milk, sugar, spices and salt until smooth.
  3. Pour into the crust and bake for 15 minutes.
  4. Reduce heat to 175°C (350°F) and bake until the centre is just set, 35 to 45 minutes.
  5. Cool completely before slicing.

  • A slight wobble in the centre prevents overbaking.
  • Bake one day ahead and refrigerate.
  • Use plain pumpkin purée, not pre-sweetened pie filling.
