Why this recipe works

Ingredients

  • 1 whole turkey, 5–6 kg (11–13 lb), fully thawed
  • 115 g (1/2 cup) softened butter
  • 2 tbsp chopped sage, thyme and rosemary
  • 2 tsp kosher salt, plus more as needed
  • 1 tsp black pepper
  • 1 onion, quartered
  • 1 lemon, halved
  • 500 ml (2 cups) low-sodium stock

Method

  1. Remove the turkey from the refrigerator 45 minutes before roasting. Pat it dry and remove the neck and giblets.
  2. Heat the oven to 165°C (325°F). Mix the butter, herbs, salt and pepper. Rub some beneath the breast skin and the rest over the outside.
  3. Place onion and lemon in the cavity. Set the turkey breast-side up on a rack in a roasting pan and add the stock below.
  4. Roast until the thickest part of the breast and inner thigh reach a safe temperature. If the skin darkens too quickly, tent loosely with foil.
  5. Rest at least 30 minutes before carving so the juices redistribute.

  • Do not rinse raw turkey; it can spread bacteria around the sink.
  • Resting is part of the cooking process and improves slicing.
