Why this recipe works

Ingredients
- 1.8 kg (4 lb) sweet potatoes
- 60 ml (1/4 cup) maple syrup
- 60 g (1/4 cup) butter
- 1 tsp cinnamon

- 75 g (3/4 cup) rolled oats
- 75 g (1/2 cup) chopped pecans
- 2 tbsp brown sugar
Method
- Cook peeled sweet potatoes until tender, then drain well.
- Mash with maple syrup, butter, cinnamon and nutmeg. Spread in a baking dish.
- Combine oats, pecans and brown sugar with a little melted butter. Sprinkle over the top.
- Bake at 190°C (375°F) until hot and lightly crisp, about 25 minutes.
- Let stand five minutes before serving.
