Why this recipe works

Ingredients

  • 3 acorn squash, halved and seeded
  • 2 tbsp olive oil

  • 75 g (1/2 cup) dried cranberries
  • 60 g (1/2 cup) chopped pecans

Method

  1. Heat the oven to 200°C (400°F). Brush squash with oil and roast cut-side down for 30 minutes.
  2. Sauté onion and mushrooms until browned. Stir in rice, cranberries, pecans and sage.
  3. Turn the squash over, season, and fill generously with the rice mixture.
  4. Bake 20 to 25 minutes more, until tender and hot throughout.
  5. Serve one half per person or cut into wedges for a buffet.
